Vinifizierung des Kalksteins 3 des Hauptrotweins: Manuelle Lese mit Auswahl auf einem Sortiertisch am Eingang des Weinkellers. Es folgt das Entrappen und Zerkleinern, wobei das Ergebnis in temperaturkontrollierte Edelstahltanks für die alkoholische und malolaktische Gärung überführt wird. Mazeration für etwa 20 Tage unter Verwendung der Delestage-Technik. Der Wein reift 24 bis 30 Monate in gebrauchten 225-Liter-Fässern aus französischer Eiche. Er reift weitere 6 Jahre in der Flasche, bevor er auf den Markt kommt.
