Vinifizierung des Weins Sidónio de Sousa Merlot Tinto 2017: Entrappung/Pressung und Abkühlung der Trauben im Keller in kleinen offenen Gärbehältern, wo die pelliculare Mazeration beginnt und anschließend die Fermentation erfolgt. Die Trauben werden manuell mit Holzstöcken getreten, um eine größere Extraktion der weintypischen Eigenschaften der Rebsorte Merlot zu erreichen. Nach der langsamen Fermentation in kleinen offenen Gärbehältern wird der Wein in Zementtanks und Edelstahlbehälter überführt, wo er bis Januar des folgenden Jahres ruht, zu dem Zeitpunkt wird er filtriert und in neue französische Eichenfässer umgefüllt, wo er 6 Monate reift.
