Espumante produzido com o mosto lágrima (sem prensagem), de uvas 100% Alvarinho. A fermentação em garrafa, o estágio prolongado (24 meses) sempre a temperatura controlada e a harmonização da casta com o método tradicional Champanhês (método clássico), fazem do Côto de Mamoelas um espumante “guloso “com uma elegância, frescura, cremosidade e persistência únicas. Ideal para todas as ocasiões, onde se pretende surpreender ! VINIFICAÇÃO As uvas previamente seleccionadas e exclusivamente transportadas em caixas de 20 kg são prensadas inteiras para obtenção de um mosto de grande qualidade, para dar origem ao Espumante Vinho Verde Alvarinho. O mosto é clarificado a 12º C durante 48 horas e fermentado a temperatura controlada durante 12-15 dias. Segue-se um período de estágio sobre borras finas de 5 meses. Posteriormente, procede-se ao engarrafamento, fermentação (método clássico) e estágio de 24 meses, findo o qual se realiza a “remouage” e o “degorgement”.
