Vinifikation des Caves São João Schaumweins 100 Jahre Geschichte Brutto: Nach einer sehr schonenden Pressung der Ende August geernteten Trauben fermentierte der Most 15 Tage lang in Edelstahltanks bei kontrollierter Temperatur. Die Herstellung nach der klassischen Methode begann im März 2016 mit der Extraktion mit freien Hefen. Die Gärung erfolgte 25 Tage lang bei 14 °C im Keller, gefolgt von einer 48-monatigen Reifung in der Flasche auf der Hefe , für die erste entsorgte Charge, im Mai 2020.
Gelb mit blumigen Nuancen
Er hat einen trockenen Auftakt, eine ausgezeichnete Textur und Cremigkeit und zeigt auch eine große geschmackliche Nachhaltigkeit.
Geröstete Mandeln, Toast, getrocknete Blumen, Butterkekse, Brioche, getrocknete Feigen, Honig, Zitrusschalen, kandierte Früchte, Kreide und Spuren von roten Früchten dominieren das Aroma dieses sehr reichhaltigen und komplexen Schaumweins.
