Dies ist ein Branntwein, der ausschließlich aus den Trester von roten Trauben hergestellt wird. Eine der seltenen Eigenschaften der Herstellung dieses Branntweins, die sowohl analytisch als auch aromatisch sehr wichtig ist, besteht darin, dass die Destillation unmittelbar nach Abschluss der Gärung im Lagar erfolgt, wodurch ein sehr niedriger Methanolgehalt erreicht wird. Eine weitere Besonderheit ist, dass die Maische ohne Entfernen der Stiele vinifiziert wird, da wir in früheren Versuchen festgestellt haben, dass die aromatische Intensität eines Tresterbrandes aus nicht entstielten Trauben viel feiner ist. Dieser Branntwein wird in einer Säulendestille in unserem eigenen Weinkeller destilliert.
