Das Jahr 2000 war ausgezeichnet für die Trauben des Hochlands von Favaios. Die Natur bescherte uns ein ausgewogenes Jahr mit milden Temperaturen und Regen zu den richtigen Zeiten, was die Entstehung von Trauben von großer Qualität, Harmonie und voller charakteristischer Aromen der Rebsorte ermöglichte. Nach sorgfältiger Auswahl der besten Trauben von Favaios wurden diese wie traditionell in der Region üblich mazeriert und vergoren. Die alkoholische Gärung ist sehr kurz, wobei unmittelbar nach dem Aufsteigen der Schicht der größte Teil des Mostes abgezogen und Branntwein zugegeben wird. Ein kleiner Teil des Mostes fermentiert und mazeriert weiterhin mit den Schalen für einige Tage, und erst später erfolgt die Destillation dieses aromatisch sehr reichen Mostes. Der erste und zweite destillierte Most werden anschließend gemischt und in alten Holzfässern gelagert, wo der Wein langsam reift und sein Bouquet über 20 Jahre verfeinert. Die langen Jahre der Holzreifung halfen, das aromatische Profil des Weins sowie seinen Geschmack weiter zu entwickeln und zu komplexifizieren. Es ist ein schönes Beispiel der besten Moscatéis, die auf dem Hochland von Favaios hergestellt werden. Von dieser Ernte wurden nur 3200 Liter für diese Charge ausgewählt. LIMITIERTE AUFLAGE
