Vinifikation des Herdade das Servas Alicante Bouschet Tinto 2017: Die Trauben werden am Sortiertisch ausgewählt, entrappt und anschließend vor der Gärung mazeriert. Die Gärung erfolgt in einer Weinpresse und in Edelstahltanks mit Temperaturkontrolle. Phase: Sobald die malolaktische Gärung abgeschlossen ist, reift der Wein 12 Monate lang in französischen und amerikanischen Eichenfässern des ersten und zweiten Jahres. Nach der Abfüllung ruhte er 10 Monate lang in Flaschen in unserem Keller. Um alle seine Qualitäten zu bewahren, wurde dieser Wein nicht stabilisiert und kann sich auf natürliche Weise ablagern.
