Die Trauben werden von Hand geerntet und ausgewählt, mit den Füßen getreten und in den offenen Steinlagare des Kellers vergoren, genau die gleichen Methoden, die schon seit langem angewendet werden hundert Jahre bei Herdade do Mouchão und machen Dom Rafael zu einem der berühmtesten Rotweine der Region.
