Vinifikation des Quinta das Bageiras Reserve Tinto 2021: Einige seiner Baga-Trauben liefern alte Trauben, aber in Jahren, in denen es keinen Weinkeller und eine Reserve gibt, ist für diesen Wein eine Beibehaltung der Trauben aus den alten Trauben vorgesehen. Diese Trauben werden 5 bis 8 Tage lang in einer offenen Presse ohne Entrappen vergoren (Beeren nicht von der Traube entfernen). Anschließend wird mehrmals täglich mit Holzmassen umgepumpt, bis die richtige Intensität erreicht ist. Anschließend gärt der Wein in Tonnen von Altholz. Während er ruht, wird er gereinigt und etwa 18 Monate lang in denselben Fässern gereift. Die Abfüllung erfolgt ohne Schönung oder Filterung. Alle diese Prozesse werden manuell durchgeführt.
