Die Pinot Noir-Trauben stammen von der Quinta de Nápoles, aus einem Anfang des Jahrtausends gepflanzten Weinberg, der seit 2018 nach biologisch zertifizierten Methoden bewirtschaftet wird. Die Auswahl der Trauben erfolgt direkt im Weinberg, um nur die Trauben zu ernten, die sich in einem perfekten Reife- und Gesundheitszustand befinden. Sie werden in 20-kg-Kisten geerntet und direkt in Edelstahltanks, Traube für Traube, gegeben, wo sie zu Fuß gestampft werden und spontan bei kontrollierter Temperatur vergären. Nach der alkoholischen Gärung im Edelstahl erfolgt die malolaktische Gärung bereits im Fass, wo der Wein etwa 16 Monate reift.
