Akashi Ume ist ein japanischer Whisky, der in Bourbonfässern gereift und anschließend einige Monate in Umeshu Shiratama-Fässern (einem japanischen Pflaumenlikör) verfeinert wird. Er stammt aus der ältesten der japanischen Brennereien, der Eigashima-Brennerei, die besser unter der Marke White Oak bekannt ist. Akashi Meisei ist eine Mischung aus 30% Single Malt und Grain Whisky.
