Die roten Trauben aus unseren besten Weinbergen werden von Hand geerntet und in kleinen Kisten in unseren Keller transportiert. Wir beginnen den Prozess mit dem Abbeeren, Zerkleinern und Verpacken in den Mühlen. Die vorfermentative Mazeration erfolgt mit mechanischem Treten für 2 Tage und die spontane Gärung mit Temperaturkontrolle erfolgt für 10 bis 15 Tage, gefolgt vom Pressen. Reifung in Fässern und Fässern für einen Zeitraum von mindestens 24 Monaten.
