Quinta dos Carvalhais ist die Weinmarke, die sich auf die Produktion der besten und schmackhaftesten Weine des Dão spezialisiert hat und die größte Referenz in der Region darstellt – sie repräsentiert die Kunst, die Authentizität und die Qualität der besten Weine des Dão. Bei diesem Quinta dos Carvalhais Reserva Branco werden alte Gewohnheiten der Region in Bezug auf die Reifung von Weißweinen wiederbelebt, als es üblich war, diese über lange Zeiträume in alten Eichenfässern zu lagern. Die Trauben wurden in der Kellerei in 20-kg-Kisten angeliefert und direkt in die pneumatische Presse entladen. Die Moste, die vor Oxidation geschützt waren, wurden einer statischen Dekantierung bei niedriger Temperatur für einen Zeitraum von 24 Stunden unterzogen. Anschließend wurden sie in Edelstahltanks mit kontrollierter Temperatur überführt, wo die Gärung etwa 20 Tage lang bei Temperaturen stattfand, die 16 °C nicht überschritten. Reifung von 16 Monaten in gebrauchten Fässern (20 % 500 Liter; 80 % 225 Liter).
