Vinifizierung des Tiago Cabaço Blogs Varietal Rot: Im Jahr 2019 erlebten die ältesten und besten Parzellen eine lange und allmähliche Reifung, was zu Trauben mit einem außergewöhnlichen Gleichgewicht zwischen Säure und Tanninen führte. Die Sorten Syrah und Alicante Bouschet profitierten am meisten von den günstigen Bedingungen der Natur und lieferten Trauben im perfekten Reifezustand. Mit einem so hochwertigen Rohmaterial entschieden sie sich, so wenig wie möglich einzugreifen, und ließen die Trauben für sich sprechen. Sie beschränkten sich auf ein leichtes Treten in den Lagares, gemäß den traditionellen Methoden der Region, gefolgt von einer Reifung in neuen und gebrauchten Fässern aus französischer Eiche, damit der Wein sich auf reinere Weise ausdrücken konnte.
