Bastardo, ebenso wie die Malvasia Preta, ist in der Quinta das Carvalhas auf einer relativ hohen Lage gepflanzt, jedoch nach Süden ausgerichtet. Jedes Jahr ist die Rebsorte Bastardo die erste, die unter den roten Trauben gelesen wird, da sie für ihren kurzen Reifungszyklus bekannt ist und auch empfindlich gegenüber Fäulnis in der Phase der Überreifung ist. Wir glauben an diese Sorte nicht nur wegen ihrer Anpassungsfähigkeit, sondern vor allem wegen des sehr starken sortentypischen Charakters, bei dem ihre aromatische Intensität und der Geschmack wirklich beeindruckend sind. Die Fermentation erfolgt in kleinen Edelstahltanks mit Schalenkontakt, gefolgt von einer Reifung von 12 Monaten in gebrauchten französischen Eichenfässern.
