Morgado de Sta. Catherina ist eine Referenz für Arinto-Weine aus der Region Bucelas und trägt das jahrhundertealte Erbe der großen Weißweine der Region. Die Geschichte des Morgado de Santa Catherina, zu dem auch die Quinta da Romeira gehörte, reicht bis ins Jahr 1703 zurück, dem Jahr seiner Gründung, und erfüllt die Absichten von D. Catarina de Bragança, der Königin von England. Wein aus Trauben der Rebsorte Arinto von den Weinbergen der Quinta da Romeira, mit manueller Lese. Die Moste vergoren in Edelstahltanks und in französischen Eichenfässern. Die Prozentsätze wurden entsprechend angepasst, um eine gute Integration des Holzes zu ermöglichen, ohne die Frische, die Aromen und den charakteristischen Geschmack des Arinto zu beeinträchtigen. Während der 8-monatigen Reifung in französischen Eichenfässern wurde die Integration des Weins mit dem Holz durch Batonnage gefördert. Nach dieser Zeit wurde die Endmischung vorgenommen und reifte bis zur Abfüllung im Edelstahltank.
