Für diesen Brandy werden drei verschiedene Traubensorten verwendet (Sultanina-Trauben, Savatiano und Korinthen). Nach der Destillation werden die Aromen in Limousin-Eichenfässern für mindestens drei Jahre zur Reifung gelagert. Muskattrauben (aus Samos oder Lemnos), Rosenblütenessenzen und eine geheime Reihe von aromatischen Pflanzen werden dem Brandy hinzugefügt. Anschließend wird diese neue Mischung für ein weiteres Jahr in ein Fass gegeben. Vor der Abfüllung wird der Metaxa mehrere Tage unter Null Grad gelagert, gefiltert und schließlich abgefüllt. Reifung für 5 Jahre in Eichenfässern. Destillation in diskontinuierlicher Brennblase.
