Zur Herstellung dieses Brandys werden drei verschiedene Traubensorten verwendet (Sultana-, Savatiano- und Corinthe-Trauben). Nach der Gewinnung des Destillats werden seine Aromen für einen Zeitraum von mindestens drei Jahren in Limousin-Eichenfässern zur Entfaltung gebracht. Dem Brandy werden Muskat-Trauben (aus Samo oder Lemno), Rosenblütenessenzen und eine geheime Reihe aromatischer Pflanzen zugesetzt. Anschließend wird diese neue Mischung für ein weiteres Jahr wieder in ein Fass gegeben. Vor der Abfüllung verbringt Metaxa mehrere Tage bei Minustemperaturen, wird gefiltert und schließlich in Flaschen abgefüllt. 5 Jahre Reifung in Eichenfässern. Destillation im Batch-Destillierapparat.
