Die Aguardente Bagaceira Velha Alvarinho Quinta de Soalheiro entstand 1999 mit der Einführung der 1. Serie von 1428 nummerierten Flaschen. Seit der ersten Ernte unterliegt die Herstellung dieses Schnapses der Destillation der besten Trester von Alvarinho, die über die Jahre in Eichenfässern reifen, aus denen sie die Farbe und Struktur extrahiert, die das intensive Aroma der Rebsorte vervollständigen. Die aromatischen Schalen der Trauben der Rebsorte Alvarinho, die bei der Lese durch Pressen vom Most getrennt werden, fermentieren etwa 1 Monat lang in einer Umgebung ohne Luft (Anaerobiose). Diese Fermentation verwandelt den vorhandenen Restzucker in Alkohol und extrahiert die besten Aromen aus den Schalen. Die langsame Destillation in einer traditionellen Brennblase trägt dazu bei, diese Aromen zu konzentrieren und ergibt einen sehr aromatischen Schnaps, der charakteristisch für die Rebsorte Alvarinho ist. Der Wechsel zwischen der Reifung in neuen und gebrauchten Eichenfässern vermittelt im Laufe der Jahre ein sehr besonderes Aroma und einen Geschmack, die diesem Schnaps eine einzigartige Persönlichkeit verleihen.
