Nach einer sehr schonenden Pressung der Trauben, die zwischen Mitte August und den ersten Tagen im September geerntet wurden, fermentierte der Most 16 Tage lang in Edelstahltanks bei kontrollierter Temperatur. Die Herstellung, die nach der klassischen Methode erfolgte, begann Anfang April 2016 mit der Zugabe von freien Hefen, wobei die zweite Gärung 26 Tage lang bei 15 ºC in der Flasche stattfand, gefolgt von einer Reifung auf der Hefe von 20 Monaten.
