Moscatel Favaios 1980 ist ein Weintyp, der nur in Jahren hergestellt wird, in denen die Trauben eine außergewöhnliche Qualität aufweisen. Nach sorgfältiger Auswahl der besten Favaios-Trauben wurden diese wie in der Region traditionell mazeriert und fermentiert. Die alkoholische Gärung dauert sehr kurz, und kurz nachdem der Mantel aufgegangen ist, wird der größte Teil des Mostes entlüftet und der Brandy aufgetragen. Ein kleiner Teil des Mostes gärt und mazeriert jedoch noch einige Tage mit den Schalen und erst später muss dieser sehr aromatische Most ausgebaut werden. Der erste und zweite Most werden dann gemischt und in sehr alten Holzfässern gelagert und anschließend langsam gereift, wodurch sich sein Bouquet über Jahrzehnte verbessert.
Der Geschmack ist voluminös, aber delikat, mit gut ausbalancierter Süße und Säure, frisch und elegant.
