Im Laufe der Jahre, als die Nachfrage nach Chablis wuchs, erweiterte die Appellation ihre Grenzen, um dieser Nachfrage gerecht zu werden. Leider fand ein großer Teil dieser Expansion in Gebieten statt, in denen der Portland-Kalkstein der vorherrschende Bodentyp ist. Traditionell bis ins Mark, beziehen Jean-Paul und Benoît Droin ihr Chablis aus dreißig Parzellen in den Dörfern Courgis und Fleys. Mit insgesamt 9,33 ha und vollständig in Kimmeridgischen Böden garantieren diese Lagen eine Mineralitätstiefe, die man von der Appellation erwartet. Es wird vollständig im Tank vergoren und gereift.
