Vinifizierung des Quinta de Azevedo Torra Grande Escolha Branco: Die manuell geernteten Trauben werden sofort in die Kühlkammer gebracht. Nachdem sie 10ºC erreicht haben, werden sie sanft zum Entrapper geleitet und bei niedrigen Temperaturen sanft gepresst, gefolgt von einer statischen Kaltdekantation über 3 bis 5 Tage, mit dem Abziehen der Hefen in den ersten 24 Stunden. Fermentation bei kontrollierter Temperatur zwischen 15-16ºC. Reifung: Nach der alkoholischen Fermentation reifte der Wein 8 Monate in 1200L Fässern und 500L Barriques aus französischer Eiche erster und zweiter Nutzung. 15% des Lots reifte auf der Hefe in einem Edelstahltank zur Erhaltung der gesamten Frische.
