Vinifizierung des Weins Quinta das Bageiras Avo Fausto weiß 2021: Hergestellt aus Maria Gomes-Trauben, stammt dieser Wein von einem Weinberg, dessen Produktion stark reduziert und relativ früh gelesen wurde, um die natürliche Säure zu erhöhen, die durch einen weißen Schirm verursacht wird. Er wurde offen vom Fass vinifiziert, wobei der größte Teil in kleine Dekanter von 1 m³ gefüllt wurde, in denen er zwischen 24 und 36 Stunden verblieb, um die Dekantierung durch natürliche Nutzung zu ermöglichen. Am Ende dieses Prozesses erfolgte die Gärung in gebrauchten französischen Eichenfässern. Es wurde eine Verbindung hergestellt und in den Fässern stagnierte er, bis er auf natürliche Weise vollständig klar wurde. Abgefüllt ohne Filtration oder Schönung.
