Nach einer sehr sanften Pressung der Trauben, die Ende August (Chardonnay) und Mitte September (Arinto) geerntet wurden, fermentierten die Moste 15 Tage lang in Edelstahltanks bei kontrollierter Temperatur. Die Herstellung, die nach der klassischen Methode erfolgte, begann im März 2017 mit der Tirage, wobei die zweite Gärung 25 Tage lang bei 14 ºC in der Keller stattfand, gefolgt von einer Flaschenreifung auf der Hefe von 20 Monaten für die erste degorgierte Charge.
