Tinto Cão ist ein Synonym für Douro! Eine der am meisten geschätzten Rebsorten von den aktuellen Winzern in der Region aufgrund ihrer Anpassungsfähigkeit, Widerstandsfähigkeit und niedrigen Produktivität. Eine Rebsorte mit hohem Ertrag, kleinen Beeren und sehr dicker Schale, die uns dennoch einen weniger konventionellen Ansatz bei ihrer Vinifikation vorschlägt, um die frischere und elegantere Seite dieser Sorte zu entdecken. Vinifikation der Serien Tinto Cão Tinto: Die Trauben werden von Hand geerntet und in 20-kg-Kisten zur Kellerei transportiert. Nach einer sorgfältigen manuellen Auswahl werden 30% der Trauben entrappt, und die Trauben werden leicht zerdrückt, bevor sie in den Gärbehälter geleitet werden, während die restlichen 70% mit dem ganzen Traubenbündel in denselben Behälter gelangen. Es folgt die alkoholische Gärung des Mosts in Edelstahltanks bei 24-26ºC. Der Wein reift 12 Monate in gebrauchten französischen Eichenfässern bis zur Abfüllung.
