Der Moscatel Favaios 1980 ist die Art von Wein, die nur in Jahren vinifiziert wird, in denen die Trauben eine außergewöhnliche Qualität gezeigt haben. Nach sorgfältiger Auswahl der besten Trauben aus Favaios wurden diese wie traditionell in der Region mazeriert und fermentiert. Die alkoholische Gärung ist sehr kurz, wobei unmittelbar nach dem Aufsteigen der Schicht der größte Teil des Mostes abgezogen und Branntwein zugegeben wird. Ein kleiner Teil des Mostes fermentiert und mazeriert jedoch weiterhin mit den Schalen für einige Tage, und erst später wird dieser aromatisch sehr reiche Most gebrannt. Der erste und zweite gebrannte Most werden dann gemischt und in sehr alten Holzfässern gelagert und reifen anschließend langsam, wobei sich ihr Bouquet über Jahrzehnte verfeinert.
