Gelegen südlich des Ortes Ancas, in der Gemeinde Anadia, in der privilegierten Gegend von Figueira da Costa. Vinifikation des Espumante Sidónio de Sousa Special Cuvée Bruto: Die Trauben werden in die Membranpresse entladen, wo der Tränenmost ohne Pressung gewonnen wird. Der Most wird 24 Stunden lang gekühlt, dekantiert und in einen Edelstahltank umgefüllt, in dem die Gärung mit Temperaturkontrolle stattfindet. Nach der Gärung setzt sich der Wein natürlich im Tank ab und wird am Jahresende geklärt, um die Abfüllung des Schaumweins mit freien Hefen vorzubereiten. Die Schaumweinflaschen kommen in den Keller, um die zweite Gärung in der Flasche bei kontrollierter Temperatur und Lichtabwesenheit durchzuführen. Nach der Gärung verbleiben die Flaschen im Keller zur Reifung, bis das Rütteln und das Degorgieren ohne Zuckerzusatz erfolgt, ab diesem Zeitpunkt ist das Produkt verkaufsbereit.
