Vinifizierung: Aus kleinen Parzellen stammend, werden die zuvor ausgewählten Trauben im September von Hand in Kisten gelesen, damit sie am Morgen noch in die Kellerei gelangen. Nach 3 Tagen der präfermentativen Mazeration erfolgt die alkoholische Gärung in Edelstahltanks bei 26ºC. Die Trester werden in einer hydraulischen Presse gepresst und die malolaktische Gärung findet in Fässern (neu und 2. Jahr) aus französischer Eiche statt, wo sie 14 Monate reift.
