Vinifizierung des Weins Carm Reserva Branco: Trauben, die sich nicht in einwandfreiem Zustand befanden, wurden entfernt, die Trauben wurden mit vollständiger Entrappung vinifiziert, gefolgt von sanftem Quetschen und Hautmazeration; etwa 12 Stunden lang. Nach dieser Zeit wurde unter inerten Bedingungen in einer pneumatischen Presse gepresst, gefolgt von einer Klärungsphase des Mostes von 24 bis 48 Stunden, abhängig von der Rebsorte und dem Reifegrad. Vinifizierung in Hyper-Reduktion, Gärung bei 12ºC und Umfüllen unter kontrollierter Atmosphäre. Die Weine reiften nacheinander in Edelstahl und französischen Eichenfässern auf feiner Hefe (Bâtonnage) bis zur Abfüllung. Reifung: 50 % in Edelstahl und 50 % in französischen Eichenfässern für 8 Monate auf feiner Hefe.
