Die alten Reben des Quinta Vale D. Maria sind in verschiedene Parzellen unterteilt, und jede Parzelle wird von Hand geerntet. Die Trauben werden ausgewählt, bevor sie in den Keller gelangen. Sie werden entrappt und in Lagares 1 bis 3 Tage vor der Fermentation, die in Lagar und/oder in Edelstahltanks stattfindet, gestampft. Im Lagar werden die Weine jede Nacht mit den Füßen gestampft, in den Edelstahltanks werden manuelle Überpumpungen durchgeführt. Die Weine werden klar in neue französische Eichenfässer von 225 Litern gefüllt, die aus verschiedenen Tonnellerien stammen (Seguin Moreau, François Fréres, Taransaud, Nadaliee Berthomieu), wo die malolaktische Fermentation stattfindet. Alle Weine reifen anschließend 21 Monate in französischen Eichenfässern (70% neue Fässer und 30% ein Jahr alte Fässer), wobei die verschiedenen Chargen aus jeder Fermentation bis zur Zusammensetzung der Endcharge, etwa einen Monat vor der Abfüllung, vollständig getrennt gehalten werden.
