Dieser Schaumwein reift 60 lange Monate in einem Keller bei konstanter Temperatur von 12ºC. Der Chardonnay zeigt Raffinesse und Frische, der Arinto mit ausgeprägter Säure hebt das Potenzial des sandig-tonigen Bodens des Weinbergs Vinha das Andorinhas hervor, der sich in der Pedreira de Vilarinho befindet. Um die für diesen außergewöhnlichen Schaumwein ELPÍDIO Superior unverzichtbare Struktur und das Erhaltungspotenzial zu erhalten, werden nur die Säfte der Pressung des Kerns der ganzen Traube verwendet, nach der Trennung der ersten und letzten Extraktion. Die Trauben werden zur ersten Gärung belassen, wobei der Saft in Basiswein verwandelt wird. Der Verbleib im Tank ermöglicht die Entwicklung der Komplexität der Aromen und der Struktur des Schaumweins Elpídio Superior. Das Degorgieren glacée des Schaumweins São Domingos Elpídio Superior Brut befreit die Hefen, und anschließend werden 4 g/L Versandlikör hinzugefügt, um den Wein abzuschließen. Nach einer Frist von zwei Monaten nach diesem gesamten Prozess ist die Schaumweinflasche bereit für den Markt.
