Vinifizierung des Weins Esporao Private Collection Tinto 2019: Jede Rebsorte wurde separat vinifiziert und gereift. Der Syrah und der Aragonez mit Fermentation in kleinen Edelstahltanks und Fußstampfen, abwechselnd mit kurzen manuellen Umpumpvorgängen, die 2 bis 3 Mal täglich je nach täglicher Verkostung während der Fermentation durchgeführt wurden. Der Alicante Bouschet fermentiert in einem kleinen Edelstahltank mit manuellen Umpumpvorgängen. Auf diese Weise und aufgrund der relativ empfindlichen Schale der Traube wird eine übermäßige Extraktion von Tanninen durch das Fußstampfen vermieden. Nach dem Pressen wurden die Weine getrennt gehalten. Die malolaktische Gärung erfolgte spontan in den Fässern. Die Reifung erfolgte zu 30 % in neuen und zu 70 % in gebrauchten (1 Jahr) französischen Eichenfässern mit 225L und 500L. Nach 18 Monaten Reifung, während der nur eine Umfüllung unmittelbar nach der malolaktischen Gärung durchgeführt wurde, wurde die Endmischung erstellt und am 25. Juni 2015 abgefüllt, nur mit einer leichten Filtration und ohne jegliche Schönung.
