Vinifizierung des Schaumweins Caves São João 100 Jahre Geschichte Brut: Nach einer sehr schonenden Pressung der Trauben, die Ende August geerntet wurden, fermentierte der Most 15 Tage lang in Edelstahltanks bei kontrollierter Temperatur. Die Herstellung, nach der klassischen Methode, begann im März 2016 mit der Tirage mit freien Hefen, wobei die Zweitgärung 25 Tage lang bei 14 ºC im Keller stattfand, gefolgt von einer 48-monatigen Flaschenreifung auf der Hefe für die erste degorgierte Charge im Mai 2020.
