Vinificação do Vinho Ribeiro Santo Encruzado Branco: Vindima manual. Uvas provenientes de uma única vinha da casta Encruzado, da Quinta do Ribeiro Santo. Desengace total e prensagem. Seleção do mosto de uva e pós arrefecimento e decantação a baixa temperatura por 24h. Fermentação em cubas de inox com temperatura e rondar os 15ºC durante 20 dias. 50% do vinho termina a fermentação em barricas novas de carvalho francês por 4 meses.
