Trasporto in piccole casse per evitare lo schiacciamento. Selezione manuale dei grappoli. Macerazione pellicolare a freddo. Pressatura delicata. Fermentazione e affinamento in botti di rovere francese e austriaco per 19 mesi. Senza stabilizzazione né filtrazione (può formarsi deposito nella bottiglia). Prodotto solo in anni eccezionali.
