Lo Spumante Real Companhia Velha Brut è il risultato di un'accurata selezione di Pinot Nero e Chardonnay provenienti essenzialmente da Quinta de Cidrô a São João da Pesqueira, con parte dei Pinot raccolti a Quinta do Casal da Granja sull'altopiano di Alijó. Il terroir del Cidrô, grazie alla sua altitudine e al clima mite, consente un ciclo più lungo in vite, permettendo così sia al Pinot Nero che allo Chardonnay di essere raccolti nel momento perfetto per essere spumanti. Questa bellissima Quinta, pur trovandosi ad un'altitudine di 550 m, ha un terreno povero e scistoso, che si traduce in una produzione inferiore, che conferisce a questo Spumante un'ottima struttura, volume e acidità. Sull'altopiano di Alijó, a Quinta do Casal da Granja, i terreni più ricchi e il clima ancora più fresco danno origine a vini più freschi e aromatici. Attraverso un mirato diradamento, al fine di preservare un elevato livello di acidità naturale negli acini, i grappoli più verdi vengono raccolti e vinificati in piccoli tini di acciaio inox come base per le partite finali.
