Melgaço, la regione più settentrionale del Portogallo, è protetta da una serie di montagne che permettono un perfetto connubio tra precipitazioni, temperatura e numero di ore di sole necessarie per la migliore maturazione delle uve Alvarinho. Questa caratteristica climatica durante la maturazione è spesso associata al microclima di Monção e Melgaço, che alterna giornate calde a notti fredde, consentendo il mantenimento di aromi freschi e fruttati con un'acidità presente ma moderata, in linea con lo stile che definiamo per Soalheiro. di Vinho Verde Alvarinho Soalheiro 2019: Le uve, esclusivamente della varietà Alvarinho, vengono raccolte manualmente in cassette di piccola capacità e trasportate in cantina in breve tempo. Dopo la pressatura, il mosto ottenuto decanta per 48 ore, a cui segue la fermentazione, a temperatura controllata, utilizzando lieviti preselezionati allo scopo. Dopo che il vino si è stabilizzato avviene l'imbottigliamento, seguito dall'affinamento in bottiglia. La vinificazione dell'Alvarinho Soalheiro è finalizzata all'ottenimento di un vino che concentri la qualità delle uve e consenta una buona evoluzione dopo l'imbottigliamento.
