Vinificazione: La vinificazione delle tre varietà avviene separatamente, con il lotto realizzato successivamente. Le uve sono vendemmiate a mano e la pressatura dei grappoli interi avviene in pressa pneumatica. Dopo 48 ore di decantazione, il mosto fermenta a 18ºC in barriques da 500L di rovere francese. Terminata la fermentazione, il vino affina per 10 mesi nelle barriques con batonnage settimanale per 2 mesi.
