La Distillerie Poisson è riconosciuta per la produzione di rum di alta qualità con il marchio Père Labat, nominato in onore del padre Jean-Baptiste Labat, un missionario e agronomo francese del XVII secolo che ha fatto contributi significativi all'agricoltura e alla produzione di rum nelle Indie Occidentali. La distilleria mantiene un forte impegno verso metodi tradizionali di distillazione, preservando l'autenticità e l'eredità del rum agricolo della Guadalupa.
