Quinta dos Carvalhais è il marchio vinicolo specializzato nella produzione dei migliori e più gustosi vini Dão, diventando il più grande riferimento della regione. Quinta dos Carvalhais Branco Special è un vino senza annata di vendemmia che conferma l'eccellenza di Dão nella produzione di grandi bianchi e il potenziale di invecchiamento che caratterizza i vini della regione. Le uve delle varietà destinate a questo vino sono state ricevute in cantina in piccole confezioni da 20 kg scatole, che vengono scaricate direttamente nella pressa pneumatica. I mosti, opportunamente protetti dall'ossidazione mediante l'utilizzo di gas inerti, sono stati sottoposti a decantazione statica a bassa temperatura per un periodo di 24 ore. Sono stati poi inviati in vasche di acciaio inox a temperatura controllata, dove è avvenuta la fermentazione, per circa 20 giorni, a temperatura controllata. In questo vino si è cercato di recuperare le vecchie abitudini del Dão nell'invecchiamento dei vini bianchi, in cui si trovava è comune invecchiare per lunghi periodi in vecchie botti di rovere, attraversando così condizioni ambientali diverse durante tutto l'anno.
