Vinificazione dello Spumante Caves São João 100 Anni di Storia Lordo: Dopo una pressatura molto delicata delle uve, raccolte a fine agosto, il mosto ha fermentato per 15 giorni in vasche di acciaio inox a temperatura controllata. L'elaborazione, seguendo il metodo classico, è iniziata nel marzo 2016 con l'estrazione con lieviti liberi, con la rifermentazione avvenuta in cantina per 25 giorni a 14 ºC, a cui è seguito un periodo di affinamento in bottiglia, sui lieviti, di 48 mesi, per il primo lotto scartato, a maggio 2020.
Giallo con sfumature plumbee
Ha un attacco secco e un'ottima struttura e cremosità, mostrando anche una grande persistenza gustativa.
Mandorle tostate, pane tostato, fiori secchi, biscotti al burro, brioche, fichi secchi, miele, scorze di agrumi, canditi, gesso e tracce di frutti rossi dominano l'aroma di questo spumante molto ricco e complesso.
