L'uva raccolta a mano viene diraspata e pigiata, segue la fermentazione con macerazione delle bucce per estrarre i migliori costituenti. L'aggiunta di acquavite di vino stabilisce l'equilibrio tra corpo e aroma del vino, il momento ideale viene stabilito dal team di Enologia dopo un rigoroso controllo delle temperature e delle densità di fermentazione, fattore che varia a seconda del vitigno, del grado di maturazione e dolcezza. Fine desiderato. I vini rimangono nel Douro fino a quando non vengono trasportati a V.N.Gaia la primavera successiva, dove entrano nelle secolari cantine di Offley, per l'invecchiamento in botti di legno di rovere secondo il tradizionale sistema del vino di Porto. Nel corso degli anni, i vini selezionati per questo Offley Porto Tawny 10 Years vengono accuratamente travasati, degustati e analizzati, con le eventuali correzioni ritenute necessarie apportate dal team di Enologia. Il lotto finale risulta da una selezione di vini di età compresa tra 9 e 12 anni, elaborati in modo da mantenere la consistenza e il carattere dell'Offley Porto Tawny 10 Years.
