Vinificazione del Vino Tinto Vallado 2021 18 Litri: Circa l'80% delle uve provengono da vigneti piantati negli anni '90 e il 20% da vecchie vigne di età compresa tra 60 e 100 anni. Le uve vengono vinificate in tini di acciaio inox da 5 e 10 tonnellate, completamente diraspate. Il mosto fermenta per circa una settimana a 23º-25ºC con rimontaggi automatici programmati. Invecchiamento: circa il 70% del vino matura per 16 mesi in vasche di acciaio inox e la restante parte in botti di rovere francese da 225 litri del 3° e 4° anno.
Di buona struttura, carnoso con tannini rotondi. Finale persistente
