Quinta dos Carvalhais Encruzado è un vino bianco varietale del Dão di eccezionale qualità, massimo esponente dell'eleganza e della ricchezza del vitigno Encruzado. Erede di saperi antichi, Quinta dos Carvalhais unisce l'esperienza all'innovazione per creare vini molto eleganti, con sapori di intensa delicatezza e personalità unica. Le uve di Encruzado sono arrivate in cantina in casse da 20 Kg, venendo scaricate direttamente nella pressa pneumatica. Dopo la pressatura delle uve intere, il mosto è stato sottoposto a decantazione statica a bassa temperatura per un periodo di 24 ore. È stato poi inviato in una vasca di inox dove è iniziata la fermentazione. A metà della fermentazione, il vino è stato travasato in botti nuove di rovere francese, dove ha fermentato a temperature che non hanno superato i 19ºC, per un periodo di circa 20 giorni. Parte del vino ha fermentato e invecchiato per circa 6 mesi in botti di 225L di rovere francese nuovo, di cinque diverse tonnellerie. Durante questo periodo, il vino è stato sottoposto a frequenti operazioni di agitazione delle fecce fini, al fine di aumentare la sensazione di volume in bocca e aggiungere aromi di legno agli aromi primari. La restante parte ha fermentato e invecchiato in una vasca inox, contribuendo a ottenere un maggiore equilibrio nel lotto finale tra il vino e le componenti aromatiche.
