La casta Encruzado es exclusiva de la región del Dão, es bastante equilibrada, aromática y confiere a los vinos una gran longevidad. Las plantas crecen en laderas situadas entre los 350 y los 400 metros de altitud. La viña se conduce dentro de un programa de protección integrada, estando prohibida la aplicación de herbicidas. El control de las malas hierbas se realiza con movilización del suelo. La vendimia es manual, cuando estas alcanzan el punto óptimo de maduración, situándose en la 2ª quincena de septiembre. Este vino de primera producción fue vinificado en inox a 13ºC, teniendo dos tercios del mismo terminado la fermentación en barricas nuevas de roble francés, donde estancó durante 12 meses. Producción: 1.300 botellas.
