Quinta dos Carvalhais Encruzado es un vino blanco varietal del Dão de excepcional calidad, exponente máximo de la elegancia y riqueza de la variedad Encruzado. Heredera de saberes antiguos, Quinta dos Carvalhais une la experiencia a la innovación para crear vinos muy elegantes, con sabores de intensa delicadeza y personalidad única. Las uvas de Encruzado llegaron a la bodega en cajas de 20 Kg, siendo descargadas directamente en la prensa neumática. Tras el prensado de las uvas enteras, el mosto fue sometido a decantación estática a baja temperatura durante un período de 24 horas. Luego fue enviado a un tanque de inox donde comenzó la fermentación. A mitad de la fermentación, el vino fue trasiegado a barricas nuevas de roble francés, donde fermentó a temperaturas que no superaron los 19ºC, durante un período de aproximadamente 20 días. Parte del vino fermentó y envejeció durante aproximadamente 6 meses en barricas de 225L de roble francés nuevo, de cinco diferentes tonelerías. Durante este período, el vino fue sometido a frecuentes operaciones de agitación de las lías finas, con el fin de aumentar la sensación de volumen en boca y añadir aromas de madera a los aromas primarios. La parte restante fermentó y envejeció en un tanque de inox, y contribuyó a obtener un mayor equilibrio en el lote final entre el vino y los componentes aromáticos.

Vino fresco, equilibrado, delicado y armonioso, en el que se combinan muy bien la vibrante acidez y los toques del roble francés, en un retrogusto largo y elegante.
Aroma sutil propio de la variedad Encruzado: notas minerales, frutas blancas como melón y pera, matices florales y un toque vegetal que aporta frescura.
