Vinificación del Vino Tinto Covela Fantástico 2014: Cosecha manual. Vendimia organizada por parcelas de viñedo para asegurar la cosecha en el momento adecuado. Transporte en cajas pequeñas para evitar aplastamientos. Selección manual de racimos. Despalillado y posterior estrujado suave. Fermentación con suaves remontados manuales diarios. Maceración postfermentativa. Prensado suave. Crianza en barricas de roble francés de 300 litros durante 21 meses. Sin estabilización ni filtración (pueden formarse depósitos en la botella). Producido sólo en años excepcionales.
Rubí con buena intensidad
Entrada muy cremosa y rica. Acidez equilibrada, excelente estructura y persistencia.
Fantástica complejidad, elegante, con recuerdos a frutos rojos muy frescos, especias y minerales.
