Melgaço, la región más septentrional de Portugal, está protegida por una serie de montañas que permiten un maridaje perfecto entre precipitaciones, temperatura y el número de horas de sol necesarias para la mejor maduración de las uvas Alvarinho. Esta característica climática durante la maduración suele asociarse al microclima de Monção y Melgaço, que alterna días calurosos con noches frías, permitiendo el mantenimiento de aromas frescos y frutales con una acidez presente pero moderada, acorde con el estilo que definimos para Soalheiro. de Vinho Verde Alvarinho Soalheiro 2019: Las uvas, exclusivamente de la variedad Alvarinho, se cosechan manualmente en cajas de pequeña capacidad y se transportan a la bodega en un corto espacio de tiempo. Tras el prensado, el mosto obtenido reposa durante 48 horas, seguido de la fermentación, a temperatura controlada, utilizando levaduras preseleccionadas para tal fin. El embotellado se realiza una vez estabilizado el vino, seguido de la crianza en botella. La vinificación de Alvarinho Soalheiro tiene como objetivo la obtención de un vino que concentre la calidad de la uva y permita una buena evolución tras el embotellado.
