A Quinta das Carvalhas é uma propriedade de grande beleza e espetacularidade, com uma posição predominante na encosta da margem esquerda do Rio Douro no Pinhão, que se estende pelas encostas da margem direita do afluente Rio Torto. As mais antigas referências escritas sobre a Quinta remontam a 1759, estando as suas magníficas Vinhas Velhas, de plantação pós-filoxérica, a atingir a respeitável idade de um século.Vinificação do Quinta das Carvalhas Vinha do Eirol tinto: Após uma colheita manual de cariz cirúrgico, as uvas são transportadas até à adega em caixas de 20 kgs. Após passarem por uma criteriosa escolha manual, os cachos são direcionados para um pequeno balseiro de carvalho Francês em que apenas 30% dos cachos são desengaçados e esmagados. Segue-se a fermentação alcoólica a 24-26ºC, com um ligeiro “pisage” e remontagens feitas a balde de modo a procurar uma extração boa mas cuidada. Apos a fermentação alcoólica, o vinho termina a fermentação malolática e estagia em pipas e barricas usadas de carvalho francês.

Na prova mostra-se amplo e muito sedutor, com sabores muito frescos e originais, sugerindo nuances de bosque e frutos silvestres, terminando muito intenso e persistente.
No nariz mostra-se muito fresco e expressivo, com nuances de frutos vermelhos e citrinos, que combinam harmoniosamente com notas vegetais e de ervas aromáticas.
